They call u uncle when u look much older than them. Called u da ge when u look about their age.
Only Singaporean address others as uncle, regardless of the age of that person, The Chinese usually address others as Da Ge, Da Jie which is more respectable to the other person. I used to hear my grandma addressing others as Da Ge too.

During my undergrad days at NUS, the lady manning the drinks stall used to call me "uncle" when she looked older than my mother. My friends said it is a term of endearment.

It should be fine for you is you are older than the caller.
They always call me Shuai Ge.

Depends where and who service you lah. If pinoy they always call Sir. In nightclubs and spa, they often use lao pan or boss.  What if an air stewardess addresses you as uncle ?  : Big Grin

I have been blessed with good genes by God's grace. I still have a full head of hair in my mid-50s which is mostly black. Like I mentioned earlier, the woman operating the drinks stall at NUS uses it as a term of endearment when she calls undergrads "uncle".
