This beef should be cooked till medium rare will be good.  Also, this beef should go with red wine, which can reduce the cholesterol(LDL).....
50/50 will be better..

I am going to do experiment to replicate the Geylang lor 9 beef horfun.

No. I am doing the wet style with gravy. The beef with sauce are fried separately from the horfun.

It is good to experiment with a different style of cooking, so to get variety....

That's not horfun already. That's how they fry gubak kuay teow. For horfun, the gubak and sauce are cook separately then pour over the horfun after flipping the horfun over the frying pan until slightly burnt...... Big Grin

Yes, best beef pho from Sydney, even Vietnamese who visited Australia said the beef pho is so much better than that in Vietnam, Aussie beef tastes so much better than that in Vietnam.
