It is common to see the prata man using bare hands to flip the dough.........that is the normal practice...................

Its a grey area....SFA close one eye on prata and many hawkers one....
Likely the cook can don't use gloves, but not the rest. It might become a habit because customers use bare hands in some restuarants.
