Even the man-in-the-street S'porean knows that when a hawker's rental is increased, it eats into his profits. Any stallholder who sees a hit on his bottom line will increase his prices to cover the rise in operating costs for his business. Why does this PhD holder not realise this?

Anybody who has even a basic knowledge of Cost Accounting knows the selling price of any product, be it mee pok tar or a smartphone, is made up of the following:
1. Raw materials
2. Direct Labour
3. Overheads which include rent, indirect labour, etc
4. Profit or Loss ( Loss if the seller is selling below cost)
The first 3 items add up to form the Cost of the Product. Rental is only one component of overheads, and those who have ever seen a Profit and Loss Account (or Income Statement as the Americans call it), will see a long list of overhead items lorh.
So, she is right but the trouble with speaking to an educated audience in Parliament using jargon and language which even Jamus Lim would agree is that when it goes out of Parliament, lay peepur end up misunderstanding her.... She was not wrong as far as what she had said was concerned but wrong to assume that outside of Parliament, she wouldn't be misunderstood. She made a political mistake. Even if it doesn't affect food prices, it can affect food quality by letting us eat cheap ingredients.

Actually quite a number of moi relatives are hawkers. For them the major cost factors are always the rental and salary of their helpers. Cause this two tend to increase yearly and usually by bigger percentages. For rental even though they usually sign with their landlord by few years per renewal, but the increment at each renewal can sometime be very scary like 20% or even higher. Like a relative once kpkb how his kopitiam landlord after a renovation KNN go increase his rental by 40%, end up he really cannot afford the new rent and have to move out. So this ish not something an average hawker can easily absorbed and ish usually what cause them to pass the cost down to their customers if moving place ish not an option for them.
For raw materials, normally they will sign a 6m or 1 or 2 yrs contracts with a trustworthy supplier, and unless there is some kind of crisis (eg drought, or bird flu, pork flu, mad cow disease etc that kind of thing that affect the global supply chains. or something like GST increase), the increment in cost ish usually not too big per renewal. That why most hawkers are able to absorb this cost for at least few years before they really felt the pain and need to increase their pricing due to rising raw material cost.
