How do some hawkers offer cheap, filling meals despite rising costs?

If the hawker is willing to absorb all the costs of raw materials can lah! Big Grin Last time I learned about cost price and selling price in C Maths leh! 1 packet of 10 eggs costs $3.50, for example, so each egg costs $0.35 lah! Then the hawker sells you $0.80 per egg at ChapChyePeng stall so he earned $0.55 lah! Tio boh leh?  Thinking

the cost of operation for food stall.
roughly.
30% food cost. some lesser some more. prices fluctate
30% rental. increasing over time due to greedy land lord. but government hawker center and rented hdb coffeeshop is less greedy. they go auction only when stall vacant or rent years done.
30% labour. for those who operate their own stall. this is their profit.
10% profit. for those who rely on employed labour this is profit.

overall it is the sale price x volume of sale that counts. if sale is good land lord will increased rental to take most of the gain.

labour cost has been going up. due to increased cost of living (inflation) and those who employ worker, foreign labour are more difficult to get. some arrangement like coffeeshop owner selling quota to stall should stop. because indirectly suppress the local labour rate for hawker.
why should coffeeshop owner make money out of the whole control of foreigner labour?

the other thing. notice that government rent out hawker stall are also operated by those who purely employed worker only. wonder how they get their quota. is there any check by officer to ensure that the name of the person who bided the stall is operating it ? when check and stall license holder said go toilet or go somewhere
will be back type of excuse?

conclusion hawker who sell cheap are giving up the labour wages to try and gain more volume. so that their take home is about the same. support support when one can.

Lai Heng is cheap, tasty and good.  The stall holder and her assistants are also nice.  Not openly friendly but definitely not how lian or hostile either.

I doubt the accuracy of the report though.  Lai Heng closed one of its stalls earlier, several months back.  So how can she say she pays $3,000 for both stalls?  Unless she rented the corner one to the current fish soup/ noodles stall Big Grin

But many seniors, lower income folks and all sorts of riff raff patronise there.

During peak hours you can prepare to wait easily about 30mins to 40 mins for this economy rice dishes. The queues can be easily 15 to 20 pax at any time.
