But since god is all-knowing, he should already know that Adam and Eve will eat the apple. So why bother blaming them for eating it? And why bother planting an apple tree there then tell them not to eat it?

When God created all is good. In order to prevent man falling into  darkness He gives instructions what to do. He gives man freedom to choose .
Unfortunately man chooses to yield to his flesh instead. Due to God's unfailing love ,He still clothes them and did not destroyed them.In short He already planned to send His beloved begotten Son to redeem the sins of man to fulfilled what was prophesied .
