People eat at Shangri-la or famous restaurants because of the brand, not because of who the chef is. That's why most of these "head chefs" who start their own biz don't succeed.

food selling expensive in this climate cannot survive in long time. people will choose affordable and reasonable stall. i see a lot such stall cannot stay for long. if your food good but no one buy also fail. have to do all by one self if want to really earn, employ helper also cannot earn must if cost cannot covered by sale. lot of issue when doing business. not easy. learn from the old hawker, they will tell you why.
