Ai/ml/ds are fun to learn and great skills to acquire, but are you able to find organisations with large data sets and willing to try them out? Or they'd tried but dun find them useful?

Look at Grab using data science to tailor road direction and pricing for their customers.
I dont think they are impacting alot. This is a constant left to right and right to left. Just another service but not much impact.
