When heated to high temperatures, the hydrogen reacts with the iron oxides in the minerals to form elemental iron and large amounts of water.

Also the report says NASA uses  volcanic mineral from Hawaii, not the actual Moon regolith, which the Chinese team did using samples collected from Chang'e 5.

The field test was performed with volcanic ash known as Tephra on Mauna Kea volcano on the Big Island of Hawai'i. The tephra has similar properties to lunar regolith, so that it is regarded as a good simulant for the hydrogen reduction process.
