The cost for a plate of fried rice with eggs, char siew and a few small shrimps is maybe a dollar or less but they can sell it sky high. Study for what, just sell fried rice.

I can fry rice myself lah! Big Grin Can save some money lah! Put overnight rice from fridge into a frying pan when it's heated up then keep on stir-frying until brownish colour then chop some garlics inside the rice and keep on stir-frying lah! Then crack 1 egg on the rice and then stir-fry until golden colour lah! Last but not least throw some spring onions inside lah! Jiak lah!  Laughing

Whether or not his fried rice is really mo tak teng..........and I am quite sure a lot of zichar stalls can fry better...............I would say he has business acumen.

I am only sharing my recipe and technique with you here, so please do not forward my post to other SgTalk assh....they don't deserve to know.  Smile

1.  Heat oil to a high temperature.  The oil must be hot, so be patient, do not rush, and start when the oil is not hot.  You will know the oil is ready to be used when you see oil-steam coming out...

2.  Crack two eggs into a bowl and pour the contents into the oil - if you crack the egg directly into the oil, the oil may splash and burn your hand.  It's no joke to get burned by boiling oil.

3.  Use the spatula and stir the eggs around until the eggs "harden"

4.  Add one bowl of rice and stir fry until the rice is jumping about in the wok.

5.  Add salt to taste (do not use soy sauce, just salt will do).

6.  Add a bit of sugar (skip if your diabetes is badly controlled) and MSG, stir

7.  Add spring onion.  Stir for about 30 seconds.

8.  Enjoy

PS 1:  You can actually skip both (6) and (7) but if you are doing business, these are necessary.
PS 2:  This is a poor man's fried rice.  If you want to splurge, add five or six huge prawns - fry them along with rice. 
PS 3:  Thank me later.
