I need to sell 310 plates of cheekon rice per month

Let say In order to break even 
If I sell my cheekon rice at $5.50. 
Cost of production cheekon rice per plates $4.59

Fix cost :
Labour: $650 
Stall rental : $1200
Utility: $300
Dish washing : $400 

If above 310 plates then is considered profit or making money. Tio boh

Your fixed cost around $2550. Profit per plate is $0.9. I think u need to sell around 2800 plates before can see profit?

Not sure if 310 plates is correct but that is a very low number based on what I was told by the hawkers. Too easy to accomplish breakeven. Very unlike reality. Most hawkers I talked to sell 100-200 plates A DAY (not necessarily chicken rice).  Some way more. Of course, quite a lot hawkers with no biz sells a lot less.

Maybe your fix costs assumption is too low? I don't think labour is only $650. Part-timer?

BTW, profit is usually higher than what you have assumed per plate.

aiyah...............just sell at $10 lor...............no need sell so many plates...........Sinkies are carrot-heads.............they buy high price can show off their wealth mah................

if $10 can sell............the next week, sell at $15..............keep increasing prices as long as profit stays the same............

maybe months later................1 day sell 1 plate of rice can liao...........

Assuming a plate of CKT. The selling price is $4. If you DIY with the same ingredients, what's the cost? Probably lower than $1. The costs are mainly the rent and labour besides ingredients. That's why I say the cost of ingredients relative to selling price tend to be very low, the 'profit' (without taking labour, rent, utilities etc into consideration) is not just 20% or 30% per plate like you assumed earlier. Way much higher.

My friend who sells chicken rice like hotcakes in saigon. Only sell drumstick and no other parts. No need to chop. 17k equal to $1 sing.
